Nucleation in emulsified supercooled water.

A calorimetric technique was used to measure the nucleation rate of ice in supercooled water droplets in an oil emulsion. The nucleation rate was determined in the temperature range -39 to -33C for a wide range of droplet volumes using emulsions stabilized by two different surfactants. The results provide the first quantitative test of homogeneous nucleation theory for emulsified samples of water.
